*** I DO NOT measure my seasonings or the whipping cream. I’ve made this so much I can eyeball it pretty much. The measurements are an estimate. Just be sure to taste test as you go to get your desired taste. ***
- Butter (2 tbsp)
- Minced Garlic (A LOT, I like garlic. If you don’t, you can add 1tbsp)
- Shrimp (1lb)
- Spinach (1 1/2 cups, roughly)
- Heavy Whipping Cream (Guessing, I’d say about 2 1/2 cups. I like to add a lot of cream, because I like my pasta to be creamy and NOT DRY after it comes from the oven.)
- Penne Pasta (1lb box)
- Mozzarella Cheese (About 2 cups. Add as much or little as you like for your taste.)
- Parmesan Cheese (1/4 cup)
- Parmesan Reggiano (Freshly grated, 2-3 tbsp.)
- Italian Seasoning
- Creole Seasoning
- Garlic Powder
- Red Pepper Flakes (a pinch)
- Caribbean Jerk Seasoning (a pinch)
+ Cook Penne according package.
+ Heat skillet to medium. (I used cast iron).
+ Melt butter and then add garlic and saute for about a minute. + Add Shrimp (make sure to dry it w/ paper towel first), and season with seasonings listed above (minus the red pepper flakes and caribbean jerk seasoning). Let shrimp cook for a couple minutes, until pink. Then remove with slotted spoon.
+ DON’T remove garlic and butter from pan.
+ Pour in whipping cream and stir to remove drippings (butter, garlic, shrimp particles) from bottom of the pan. Turn heat to low-med.
+ Let whipping cream come to a LIGHT boil. Watch it carefully and stir as needed, because it will boil over QUICK. While it’s boiling I add seasonings (for my taste, you don’t have to unless you want to. Same seasoning from above.)
+ After the cream has bubbled for a few minutes, and thickened a little I add A LOT of mozzarella and parmesan cheese, and stir.
+ Add the spinach to the pan, and the shrimp, and stir.
+ After the spinach has wilted some, I added the cream, spinach and shrimp mixture into the pot with the drained penne and mixed.
+ Transferred it back to my cast iron skillet and sprinkled more mozzarella and grated some parmesan reggiano on top. I took some spinach leaves and tore them apart by hand and sprinkled on top as well. Then a little more cheese. ( I like cheese in case you can’t tell. LOL)
I also sprinkled some italian seasoning and red pepper flakes on top.
+ Then put it in the oven at 350 degrees for about 10 minutes until is started bubbling. I ended up broiling it for a couple minutes to make it a little crispy like I like. And that was it!
